The weekend is so close we can almost taste brunch!  But nothing makes brunch sweeter than catching up with friends.  My "friend time" is important for my personal sanity because I always leave feeling invigorated and happy!  So mixing my friend time with one of my favorite meals, brunch, is just a must!  What's even better?  Putting together the perfect casual yet chic ensemble makes this favorite weekend pastime so much more fun!!  

To be honest, we love both these outfits but we just couldn't choose!  Half of us were Pro-Bright and the other were Pro-Navy.  You tell us - which do you prefer with this sassy little white skirt?

The weekend is for taking it easy but that doesn't mean you have to bum around in your Lulu all day.  The promise of a happy outfit gets me out of bed quicker than anything else (well maybe the Mimosa does that...).  

When in doubt of how to make your outfit pop?  Time to raid your jewelry box, ladies! Pile on chain necklaces of all lengths and sizes and add a chunky bangle.

Want to stay in with your girl friends for brunch so you can enjoy all the champagne you want?  Not a problem, try our fruit parfait!  Sweet, summer berries are perfect for a fruit parfait, and simply displaying this dish in a glass makes for a deceptively simple recipe.  Strawberries are high in vitamin C and can boost your immune system, while blueberries can improve memory and brain function.  At their peak in summer, summer berries are so sweet you would never think of putting sugar on it! 

What you will need (serves 6):

  • 1 quart of Strawberries
  • 2 pints of Blueberries
  • 3 cups of Whipped Cream (see recipe at bottom of blog)

When you return from the grocery store, I recommend not putting the fruit in the refrigerator.  You want them at room temperature to allow the fruits to release more juice.  After the fruit is at room temperature (or in 1 hour), I would start pitting and slicing he strawberries.  Make certain that the fruit is dry before starting to assemble.

To assemble each parfait, I gently place the blueberries at the bottom.  Spoon the whipped cream over with a dollop, when you place the strawberries in it will evenly disburse the whipped cream.  Then gently place the strawberries and then another layer of whipped cream.  Layer another layer of blueberries, whipped cream, and then finally ending with the strawberries. 

Serve the parfaits immediately. 

Need a little more substance to your meal?  You can simply substitute the whipped cream for Noosa Greek Yogurt (I prefer the lemon flavor) and add a layer or two of Kashi Go Lean Crunch.

Whipped Cream is super easy to make from scratch and tastes so much better!  

What you will need (serves 6):

  • 1 cup cold heavy cream
  • 1 tablespoon sugar
  • 1 teaspoon pure vanilla extract

Whip in the bowl of an electric mixer fitted with a whisk attachment.  Don’t overbeat!
